While scalloped potatoes are often thought of as a side dish to a turkey, ham, or roast beef dinner, throw a little meat and vegetables in there and you have a complete meal in just one dish.
I found a recipe that had ham in it on?Mom?s Who Think?and adapted it a little by adding veggies and adjusting a few measurements.
Scalloped Potatoes with Ham and Broccoli
Ingredients:
5 medium potatoes
1 medium onion, chopped
2 teaspoon salt
1 teaspoon pepper
2 cups grated cheddar cheese
2 cups boneless smoked ham, cubed
1-2 cups broccoli
Sauce Ingredients:
1/3 cup all purpose flour
1 teaspoon salt
1/8 teaspoon pepper
2 cups whole milk or cream
4 garlic cloves
1. Peel and thickly slice potatoes. Rinse well.
2. Layer potatoes and onion in a crock pot (5 quart) and sprinkle with salt and pepper.
Sauce Directions:
1. Stir flour, salt, and pepper together in a saucepan. Wisk in milk gradually until no lumps remain.
2. Heat and stir until boiling. Pour 1/2 of sauce over potatoes and mix so potatoes are lightly coated. Sprinkle cheese, broccoli and ham over top, then top that with remaining sauce.
3. Cover and cook on low for 8 to 9 hours.
Ready to eat!
Next time I make this dish I will add some fresh thyme and a couple of tablespoons of butter.
